I need your cookbooks!!!

Here's the major malfunction...

We have wonderful neighbors who have a wonderful garden and they are great at sharing it's fabulous produce. Today's produce is squash. I love squash, but all I know to do w/ it is fry it. B asked if I could make a casserole BUT I can't find a squash casserole recipe to save my life!!! Help if you can, please! :)

This is my very favorite way to serve squash:

3 squash, cut into slices
3 zucchini (or just more squash! Mainly for color)
1 sweet onion
basil

Melt a little butter, cut up onion, and a handful of sugar in a sautee pan. Cook for about 5 minutes. You want the onions to caramelize. Add squash and zucchini. Salt and pepper while it is cooking. When it is almost done, throw in cut up basil (however much you like).
Sorry for the lack of measurements. I sort of made up the recipe but it is a family favorite and we eat it about 2-3 times a week in the summer!

OK, I just read my recipe. Not literally a handful of sugar!! Maybe a tablespoon?

Here's my mom's recipe:

4 squash
1/2 c onion
salt & pepper
1/2 c cracker crumbs
1/4 - 1/2 c grated cheddar cheese
1 egg

Cut squash into chunks; cook with onions and 1/4 - 1/2 c water til tender (about 8 minutes in the microwave). Drain well. Mash and season with salt & pepper.

Stir in remaining ingredients. Pour into a casserole dish; top with more cracker crumbs and/or cheese, if desired.

Bake at 350 for 30 minutes until golden.

~you can vary the amounts of all ingredients to taste.

Ditto on Jenni's recipe. I stir fried squash and zuchini with mushrooms tonight. Have you ever grilled squash? Just slice lengthwise top with butter, salt and pepper. Finally top with shredded cheese. It's tough to get rid of all the squash!

I grill squash all the time -- it is delicious. I cut it lengthwise, then brush on some olive oil and sprinkle with lemon pepper.

I love to steam squash and serve it with shredded parmesan sprinkled on it. Fab.
